Potato Pancake
I found this easy recipe on Allrecipes.com.
Ingredients: 2 cups of cold (I used Bob Evans) mashed
potatoes, 2 eggs (lightly beaten), 1 tablespoon of flour and 1/8 teaspoon of
garlic powder
Directions: Combine and mix all ingredients. Heat oil (about 2 – 3 tablespoons) in a
skillet over medium-high heat; fry potato mixture in skillet, pressing with a
spatula to flatten evenly. Cover and cook until bottom is crispy, about 10
minutes; flip and cook about 5 to 10 minutes.
Top with sour cream and chives. They might not look pretty, but very
tasty. Enjoy.
